Types of Tequila - There are two types of tequila, mixto and 100% blue
agave. The difference between the two types is that one is 100% and the
other is not. By law, mixto tequila must be at least 51% blue agave. Typically
the remaining 49% comes from other sugars.
Blanco - The true taste of the agave comes from Blanco tequilas. While
Blanco's are typically unaged, legally they can be aged for up to 59 days. This
category has many names including Blanco, silver, Plata, platino, etc.
Reposado - Reposado or Rested tequila is aged from 2 months up to right
below 1 year. These tequilas are typically referred to as the smoothest of the
tequila styles.
Añejo - Tequila labeled "Añejo" has been aged from 1-3 years.
Extra Añejo - Tequila that has the "Extra Añejo" designation is a new
designation and has been aged for more than three years.
