Info on the Back of the Bottle: Estate: Las Pomez - 2,055 meters above sea
level; 7 hectares; about a half mile away from the distillery and surrounded by Elm
trees.  As one of the highest elevation and hilly estates, it has its own micro climates
ranging from 24.8C and 9.1C with rich volcanic soil.  Extremely ripe plants harvested at
9.5 years old.

Nose: Sweet agave nectar, rich custard with a slight accent of cinnamon and ripe
tropical fruits.

Palate: Clean; sweetness balanced with dry notes.  Earthy agave with apricots and
accents of oak and nutmeg.

This bottles neck tag provide some addition information about the Ocho brand:

"Ocho represents a new way of thinking about tequila.

Ocho is a departure from the concept of distilling because it will deliver "complexity of
character."  It will do this by featuring single estate tequilas introduced in annual
vintages showcasing agave flavors from differing altitudes and micro climates.

What does this mean?

It means that Ocho will demonstrate that there exists "terroir" in agaves the same
way the wine industry has demonstrated that "terroir" exists in grapes.  "Terroir" is, of
course, the centuries-old belief that grapes draw their "character" from the soil, sun
and temperature in which they are grown.  A single estate is a single piece of land that
is affected by its own micro climate.  Each single estate will therefore deliver a different
character of tequila and it is Ocho that will be the first to demonstrate this in the
tequila category making it rare and collectible.

"The 2009 Reposado agave was harvested from our "Las Pomez" estate. Las Pomez is
located 2,055 meters above sea leavel and named for the town nearby. It is
approximately 7 hectacres with 20.336 agave plants. As on of the highest elevation
estates it has high temps of 24.8 C and lows at 9.1 C, making for the extremely
high-sugar content in the agave plant." -
